Within the Serenade Project, our DC4 Antonio Rodrigo Murgia is developing a miniaturized GC-MOS device that combines gas chromatography separation with highly sensitive metal oxide sensors to accurately analyze volatile compounds released during food spoilage. By testing different columns, oven designs, sensors, and temperature modulations, the goal is to optimize performance while preserving analytical rigor in a compact format.
The result will be a portable, low-cost system capable of estimating food shelf life on site, enabling safer consumption decisions in real retail environments. By integrating analytical chemistry, sensor technology, and microbiological data, SERENADE moves one step closer to smart, real-time food quality monitoring.
